This Layered Lemon Icebox Cake is Perfect for Summer

Are you in search of a tasty dessert that is sure to refresh you in the summer heat while satisfying your tastebuds? In that case, here is a scrumptious lemon icebox cake that is sure be your new favorite summer treat.

Ingredients:

  • 1/2 cup powdered sugar
  • 1 box Nilla wafers
  • 1 cup lemon curd
  • 1 lemon
  • 2 1/2 cups heavy cream
  • 1/4 cup simple syrup
  • 6 ounces cream cheese

Instructions:

  1. Pour the cream cheese and powdered sugar into a stand mixer and beat on medium speed for about 2 minutes.
  2. Add the heavy cream and mix for another 3 minutes. Mix in the lemon zest.
  3. Spread 2 tablespoons of the cream mix onto the bottom of a dish. Cover with a layer of the Nilla wafers.
  4. Top with about 1/3 of the cream cheese mixture before drizzling in 1/2 of the lemon curd.
  5. Cover the curd with another layer of wafers and repeat and top it all off with a layer of the cream cheese mixture.
  6. Cover with plastic and freeze for at least 3 hours.
  7. Slice a lemon peel into thin long strips. Soak in simple syrup for 3 hours.
  8. Remove the cake from the freezer and garnish with the lemon strips.
