Ingredients:
- 1/2 cup powdered sugar
- 1 box Nilla wafers
- 1 cup lemon curd
- 1 lemon
- 2 1/2 cups heavy cream
- 1/4 cup simple syrup
- 6 ounces cream cheese
Instructions:
- Pour the cream cheese and powdered sugar into a stand mixer and beat on medium speed for about 2 minutes.
- Add the heavy cream and mix for another 3 minutes. Mix in the lemon zest.
- Spread 2 tablespoons of the cream mix onto the bottom of a dish. Cover with a layer of the Nilla wafers.
- Top with about 1/3 of the cream cheese mixture before drizzling in 1/2 of the lemon curd.
- Cover the curd with another layer of wafers and repeat and top it all off with a layer of the cream cheese mixture.
- Cover with plastic and freeze for at least 3 hours.
- Slice a lemon peel into thin long strips. Soak in simple syrup for 3 hours.
- Remove the cake from the freezer and garnish with the lemon strips.
