These Smashed Potato Cups With Mushroom and Cheese Filling Are Delicious

Ingredients:

  • 6-8 small to medium-sized potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup mushrooms, finely chopped 
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup grated cheddar cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • Fresh herbs for garnish

Instructions:

  1. Start by boiling the potatoes in salted water until tender, about 15-20 minutes. Drain and cool slightly. 
  2. Preheat the oven to 400°F. Place the potatoes on a parchment-lined baking sheet, gently smash them, and drizzle with olive oil. Season with salt and pepper. Roast for 20-25 minutes until golden and crispy.
  3. While roasting, sauté onion and garlic in butter until soft, then add mushrooms and cook until browned, 5-7 minutes. Season to taste. 
  4. Create indentations in the crispy potatoes, fill with the mushroom mixture, and top with cheddar cheese. Bake for 5-7 minutes until bubbly. 
  5. Garnish with Parmesan and fresh herbs, then serve hot.
