Easy Grain-Free Granola Bar Recipe (Gluten-Free and Vegan)

Ever find yourself craving something crunchy and satisfying but want to keep it healthy? You’re in luck because we’ve got a super simple recipe for grainless granola bars that’s not only gluten-free and vegan but also absolutely delicious. Let’s dive in.

Ingredients:

  • 1 cup almonds
  • 1 cup cashews
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup coconut oil
  • 1/2 cup almond butter
  • 1/3 cup maple syrup (or agave syrup for a vegan option)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper. 
  2. In a food processor, pulse almonds and cashews until coarsely chopped. Transfer to a large mixing bowl and add pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, and shredded coconut. Mix well.
  3. In a small saucepan over medium heat, combine the coconut oil, almond butter, maple syrup, vanilla extract, and salt. Stir continuously until the mixture is fully combined and begins to gently bubble. Remove from heat.
  4. Pour the wet mixture over the dry ingredients in the bowl and stir. Transfer to your baking pan and press down firmly. Bake for 20-25 minutes. 
  5. Once cooled, cut into bars or squares and enjoy!
